FOODIES UNITE

Hello there! Living by myself in Boston, I quickly came to realize that living off fast food is not only uneconomical, but also rather boring. I decided to start cooking for myself and discovered I had quite a talent for it.

There is nothing more satisfying than cooking your own food (and I don't mean just microwave-ing something), and then tucking in to it, just to find out that it is delicious. As higher life forms on this planet, we need variety in our food on a regular basis.....I have yet to meet a person who can live off the same food everyday, and if such a person exists, s/he is the most content person in the world.

So I thought this blog would be a great place for people to meet and share ideas, recipes, culture and pretty much anything! Write about your experiences in restaurants in Boston, recommend places or warn others as you see fit :) . I'll post my favorite recipes on this blog, and invite you to do the same... Here's to food, and great culinary experiences for all!!

Great Idea for a blog!
Having just been married my husband and I have all sorts of new gadgets for the kitchen that we received as gifts and have yet to use them. One gadget is a crock pot-we've tried it out a few times. The last one turned out smelling funny and was watery. If anyone has any good crock pot recipes-please share.

Having just been married recently, we were given a crock pot as a wedding gift as well. My husband and I used it this past weekend and sort of made up our own recipe. We cut up some potatoes in big pieces and put those first in the pot. Then after having marinated the roast, placed it on top of the potatoes, then we added close to a cup of water, maybe even less. About an hour before the timer stopped, we added the vegetables. It was delicious. The key to slow cooking is to put very little water as the steam creates just enough juice and put the vegetables last as they cook much faster…

My sister in law is doing the MS Walk in September for the 6th year in a row. She recently asked for recipes for a cook book she and her team are making to raise money. Here is the only recipe I have! Although as soup goes, it's quite good!

Vegetable Tomato Soup

Ingredients:
Carrots (3)
Celery (5 stalks)
White Potatoes (3 small)
Zucchini (2 small)

Light chicken broth (32 oz. College Inn is a good one)
Hunt's Tomato Paste Basil, Garlic and Oregano (small can)
Light Olive Oil

Directions:
Slice carrots and celery into ¼ inch slices. Slice zucchini into thin rounds.

Microwave potatoes until fork tender about 4-6 minutes depending on size. (Skins are optional.) Set aside until they are cool enough to handle.

Sauté carrots and celery in a good amount of olive oil until slightly tender. Add zucchini. Continue sautéing. (Don’t overcook or it will all turn to mush.)

Cut potatoes into chunks while carrots, celery and zucchini cook.


Add potatoes and broth to pot. Bring pot up to a simmer. Add tomato paste. Bring to simmer for a few minutes until everything blends.

Variations:
Keep the ratio of 1 box of broth to 1 can of the flavored paste for the best flavor. Add other vegetables, meat or pasta to taste.

Comfort food is best concocted in crock pots...and especially tasty with this cold spell that we have been experiencing in Boston.
